Lentil Patties and Garlic-Lemon Yoghurt Dip

These red lentil patties are a wholesome vegetarian dish made from soaked red lentils blended with onion, garlic, carrot, parsley, tomato purée, and seasoning, then pan-fried until golden and crisp on the outside. They’re hearty, flavourful, and naturally rich in plant-based protein.

Served with a cooling Garlic-Lemon Yoghurt Dip — made from Greek yoghurt, fresh garlic, lemon juice, olive oil, and herbs — the combination is light, tangy, and perfectly balanced, making it ideal for a healthy lunch or satisfying dinner.

3–4 people (makes around 8 medium patties)

  • Chopping board
  • Sharp knife
  • Tea spoon
  • Table spoon
  • Mixing bowl (for soaking lentils)
  • Sieve or colander
  • Grater (for the carrot)
  • Large Frying pan
  • Wooden spoon or spatula
  • Food processor or blender
  • Ramekin or similar bowl (for the yoghurt dip)
  • Whisk or fork
  • Scales

Ingredients

The Patties

  • 285g dried red lentils
  • 1/2 red onion
  • 2 garlic cloves
  • 1 small carrot
  • 15g fresh parsley
  • 1 tbsp tomato purée
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Olive oil

Garlic-Lemon Yoghurt Dip

  • 150g Greek yoghurt
  • 1 small garlic clove
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Pinch of salt
  • Black pepper
  • Parsley, dill or coriander

Preparation

The Patties

  • Soak the lentils for at least 2 hours or overnight
  • Drain and rinse the lentils
  • Finely chop and crush the garlic
  • Grate the carrot
  • Finely chop the chosen herb

  • Finely chop and crush the garlic

Cooking Instructions

The Patties

  1. Fry the onion and garlic
  2. Add the prepared ingredients to a food processor.
  3. Add the tomato puree, salt and black pepper
  4. Blend until a paste forms.
  5. Form into patties.
  6. Lightly oil the pan to coat the base.
  7. Fry the patties gently over a low heat for 10–15 minutes, turning halfway until golden and crisp.
